Mix 2 eggs with a dash of milk, 1/2 teaspoon cinnamon powder and 1 teaspoon of coconut sugar. Cook in a pan with butter until brown and toasty on both sides. You'll get about 6 French toasts.
To whip ricotta, add 1 tablespoon cream cheese, 4 tablespoons of full fat ricotta and 1 teaspoon of honey to a mixing bowl and whip with a hand / stand blender.
To serve, spread whipped ricotta on french toast, top with fig & pistachios and drizzle with honey or maple! Easy peasy. Enjoy!
