Oven Roasted Cheesy Broccoli

A yummy Oven Roasted #glutenfree Broccoli is just what you need to get your fill of veggies for #meatfreemonday as a side with grilled meat, a snack or throw it into a salad.

Broccoli is divine when it’s roasted, it gets slightly charred and topped with cornmeal and cheddar, it gets this incredible crispy golden coating that’s to die for. It’s also very quick to do the prep - you need about 5 minutes hands on time and it just cooks on it’s own.

Here’s what you need:
Time: Prep: 5 minutes | Cook: 20 minutes
Serves: 2 - 4

Ingredients
Broccoli
1 large packet of brocollini or 2 heads of broccoli, chopped into bite sized pieces
1/2 cup cornmeal
1 cup grated cheddar
1 tablespoon nutritional yeast
2 eggs
1 tablespoon milk
Salt & black pepper

Feta Cream
1 cup Sour Cream
1/2 cup feta

1. Preheat your oven to 200 degrees Celsius and line a tray with baking paper. In one bowl add the cornmeal, grated cheddar & nutritional yeast together and in a another whisk the eggs, milk and season with salt & black pepper. One by one, dip the broccoli pieces into the egg and then into the cheddar mix, pressing it into the broccoli so it holds and place onto tray. Repeat for all. Bake for 15 - 20 minutes until cooked and crispy.
2. Blend sour cream and feta together and refrigerate until needed, serve with broccoli!
