Super quick and super easy to bake at home - they’re gluten free, dairy free and refined sugar free too!

Seedy Spinach Crackers

Here’s what you’ll need

Time: 10 Minutes prep + 40 minutes cooking time | Makes: 1 large jar

Ingredients
1 cup baby spinach finely chopped
1/4 cup chopped cilantro / chives
1 cup of seeds (sunflower, pumpkin, chia, hemp of flaxseeds - whatever you prefer)
1 cup almond flour
1/4 cup water
2 tablespoons olive oil
1 teaspoon lemon juice
2 tablespoons nutritional yeast
1/2 teaspoon salt
1/2 teaspoon black pepper (optional)

Preheat oven to 160 degrees Celsius. Combine all ingredients together into a firm dough. Roll dough out between 2 pieces of oiled baking / parchment paper into a thin 1/2 cm even layer. Bake for 20 minutes on each side till firm and slightly browned. You can bake for a further 10 minutes if not done at 40 minutes. Break into pieces, allow to completely cool before storing in an airtight container.
