Stir Fried White Miso Eggplant with Garlic

Gone in 60 seconds, quite literally because that’s how good it is.  Who’d think these 5 ingredients in 10 minutes with this Stir Fried White Miso Eggplant with Garlic could bring so much happiness. You just won’t believe how good it is, it’ll be gone in seconds.  Its HEAVENLY.  Perfect as a side, on its own with some steamed rice topped with a fried egg for a quick meal.

Time: Prep 5 mins | Cooking 10 minutes

Ingredients

1 tablespoon sesame oil

1 large eggplant, cubed and soaked in salted water for 20 minutes

1/4 cup white miso paste

1 tablespoon sesame seeds

1 tablespoon soy sauce

Microgreens or scallion to garnish

Step one: Soak the eggplant in salted water for 20 minutes and rinse well.  Head the sesame oil to a medium heat in a wok and add the sesame seeds.  Once toasted (about 1 minute) add the eggplant and turn up to a high heat.  Cook till browned and add the remaining ingredients.  The skin will be crispy but the inside will be soft so be careful when tossing.  Garnish with microgeens or chopped scallion and enjoy!
