Apple Pie Pancakes with Coconut Butter

Don't these apple sliced look like love? Make these Apple Pie Pancakes with Coconut Butter any day of the week for bright smiley faces.

Body and soul loving weekend brunching - the slices make them look so pretty and the best part is you can use your favourite batter. Mine is @birchbenders , it's so so good. You add some cinnamon & star anise to the pancake batter, slice apples super thin when cooking, add to the top, flip & cook. Added the most delicious coconut butter spiked with honey, crunchy pecans and heaven here we come. They are so so insanely delicious. Grab the recipe below:

Time: Prep 5 Minutes | Cooking 10 Minutes

Ingredients
Pancakes
2 cups pancake batter (store bought your own version)
1 teaspoon cinnamon powder
1/2 teaspoon star anise powder
1 tablespoon coconut palm sugar
1 apple, sliced finely
Coconut oil to cook

Coconut Butter
2 tablespoons coconut butter
1/2 teaspoon maple / honey

To serve
Toasted pecans
Maple syrup

1. Mix all pancake ingredients together. Heat a skillet over a medium heat, brush with coconut butter and spoon batter into small pancakes, top with a slice of apple. Flip when ready and cook on the top side. Repeat for the rest of the batter.
2. To serve top with coconut butter, toasted pecans and another drizzle of maple syrup. Enjoy!
