Creamed Spinach and Truffle Penne

Two for one with this super yummy and super quick Creamed Spinach and Truffle Penne.  So. The sauce doubles up as a sauce for creamed chicken or as creamed spinach as a side.  So it’s really 3 for 1.  Anyway.  It’s delicious with the truffle and so so easy to make for a super quickie weeknight dinner - plus spinach is one of those incredible ingredients for pretty much everythan in your body.  Spinach is pretty a superstar when it comes to the leafy greens because of the high levels of carotenoids, vitamin C, vitamin K, folic acid, iron, vitamin E and magnesium and calcium.  From boosting immunity to bone healthy, sleep to joints, digestion to nerve function, it’s great for blood pressure, healthy hair and skin and asthma management.  That’s A LOT of reasons to eat these divine little plants!  So get to it, put this on your menu for the week.

Here’s what you’ll need

Serves: 2 - 4 | Prep: 5 mins | Cooking: 10 minutes

Ingredients

125g baby spinach, chopped finely and blanched with water squeezed out

250g pasta, cooked as per instructions

3/4 cup reserved pasta water

3 garlic bulbs, minced

1 tablespoon olive oil

1 - 2 tablespoons truffle paste

200ml cooking cream

1/2 cup Parmesan

Black pepper and salt to taste

Step One: Heat the olive oil in a skillet over a medium heat.  Add the garlic and sauté for 2 minutes.  Add spinach and continue to sauté for a few minutes.

Step Two: Add cooking cream, parmesan, truffle paste and simmer.  Add reserved pasta water to desired consistency and add pasta.  Serve and enjoy!
