Mediterranean style Skillet Brown Butter Olive Chicken with Burst Tomatoes and Basil

Olives crisped up in brown butter taste oh so heavenly. This Mediterranean style Skillet Brown Butter Olive Chicken with Burst Tomatoes and Basil is delicious and such a great family meal that doesn’t take ages to make on a busy weekday or for something special on the weekend.  So I know you usually crisp up capers in a picatta and that’s what I was kind of going for this recipe.  Except I was in the mood for olives and with the nuttiness of the browned butter and the saltines of the olives, this just tastes incredible.  The cherry tomatoes add an incredible sweetness and basil just balances it.  It’s just so delicious.  Trust me, you’ll just love love LOVE this.  Serve with buttered vegetables, rice or potatoes.  Bon appetit!

Here’s what you’ll need

Serves: 2 | Prep: 5 mins | Cooking: 20 minutes

Ingredients

2 tablespoon butter

1/4 cup olives, torn roughly

1 tablespoon olive oil

1/2 white onion, chopped finely

1 cup cherry tomatoes

1/2 kg boneless chicken thigh or breast

1/2 cup single cream

1/4 cup low sodium chicken stock

Salt & black pepper to taste

Handful fresh basil

Step one:  Heat the butter over a medium heat in a skillet till it turns slightly brown.  Add the olive oil, olives and cook till they crisp up - about 1 minute.  Add onions and sauté till they soften and add the cherry tomatoes.

Step two: Turn to a medium high heat and add the chicken and cook till browned on one side.  Flip and add the remaining ingredients, allowing the ingredients to turn into a rich sauce whilst the other side of chicken cooks.  Season to taste, add more fresh basil and serve.
