Watermelon & Brown Rice Poke Bowl

Keeping it chill with this refreshing Vegan Watermelon Poke Bowl for a super quick #meatfreemonday meal. It’s light, refreshing and just perfect to give your body just the reset it needs to start your week. And it take literally 5 minutes of active time in the kitchen. It’s rich in electrolytes, fibre and the potassium can help leaving you blissed out as it helps calm feelings of anxiety and stress. Brown rice has plenty of dietary fibre and provides your gut the prebiotics it needs to balance so it’s really a win win.

Here’s what you need:
3 cups watermelon, cubed
6 tablespoons soy / tamari
2 teaspoons rice vinegar
1 tablespoon sesame oil
1 lime, juiced
1 tablespoon agave nectar / honey
2 scallions, finely sliced
2 tablespoons fresh ginger, finely sliced
2 tablespoons white sesame seeds, toasted
1 teaspoon red chilli flakes (optional)

To serve
Cooked brown rice
Toasted sesame seeds
Sliced scallion

Mix all the ingredients together and allow the watermelon to sit for a few hours in the fridge. To serve, spoon rice into a bowl, top with watermelon and drizzle with plenty of the dressing. Sprinkle with extra sesame seeds and scallion. Enjoy! The watermelon can be refrigerated for up to 3 days.
