Peach & Blackberry Blender Pancakes
Apart from the fact that peaches are so freaking tasty, I mean tasty as …. They’ve also got antioxidants and Vitamin A & C, good for immunity. You have NO reason not to try these pancakes - without the gluten, dairy and refined sugar they’re on point to lower inflammation levels. I mean, it doesn’t get easier than this. 5 minutes only guys and you just throw everything into a blender or your nutribullet and you’re good to go. Less dishes, less clean up, happy mummy, happy life. And Yeah, they’re pretty crazy divine. Happy weekend!
Here’s what you’ll need

Ingredients
2 peaches, cubed
3 leggs
3/4 cups almond / regular milk
1 teaspoon vanilla extract
1 teaspoon lemon juice
1 teaspoon cinnamon powder
½ cup coconut flour
1/2 cup arrowroot powder
1 teaspoon coconut palm sugar
1/2 teaspoon baking powder
1/2 teaspoon baking soda
pinch of sea salt
coconut oil, for greasing the skillet
Blackberries and maple / honey to serve
Step One: Place all ingredients into a blender and blitz for a few seconds till peach looks blended.
Step Two: Grease pan with coconut oil and spoon mixture in rounds onto pan. Cook for 2 minutes or till lightly browned on each side. Serve with blackberries and maple or honey! Enjoy!
