Garlicy Green Beans & Sugar Snap Peas with Almonds

Get your greens in 15 minutes with these Garlicy Green Beans and Sugar Snap Peas with Almonds.  Oh they’re so good.  Perfect as a side or if you’re short on time, top on steamed rice, fry and egg, add some chilli oil or sriracha and enjoy a low key meal.  The toasted almonds add an incredible crunch to the smokiness of the veggies once they’ve been charred.  Ugh, they’re just so good even on their own.  This recipe is also super versatile, you can try this with a combination of green vegetables  and change up the nuts so cashew, pistachio or hazelnuts and you just can’t go wrong.

So we all know greens veggies are good for us but do we know why and how good they are?  Green beans are super healthy.  The hyaluronic acid in green beans helps fight signs of aging and helps increase moisture levels.  They’re also a complex carb which means they’re a great source of fibre, great of digestion and digest slower so no spikes in blood sugar.  Apart from that they’re powerful sources of Vitamin A, C, K, C, Folate and Potassium all being great for your skin to bone health, immunity, inflammation, digestion and blood pressure.  I used avocado oil for this recipe because it’s great for heart health and high in oleic acid - an unsaturated fat. It’s also got plenty of vitamin E which helps your body absorb the other vitamins in green beans.

Here’s what you’ll need

Serves: 2 | Prep: 5 mins | Cooking: 10 minutes

1 tablespoon avocado oil

1 tablespoon butter

1 large handful sugar snap peas, slices lengthways

1 large handful green beans, trimmed

4 cloves garlic, minced

8 - 10 almonds, slivered roughly

Salt & freshly ground black pepper

Step one: In a large add slivered onions, salt & black pepper and lightly toast.  Add avocado oil, garlic, sugar snap peas and green beans.  Cover and cook, stirring occasionally for 5 or so minutes.  If you like them crispy go to 8 - 10 minutes.  Finish with salt & pepper if needed and enjoy!
