Baked Coconut Oatmeal

Quick & easy one bowl prep for a deliciously wholesome breakfast with Baked Coconut Oatmeal. Top with yogurt, drizzle with maple, fruit and you’re done! Or heat it up a little and spread with butter & honey with your morning coffee or tea.

Here’s what you’ll need

Prep Time: 5 minutes | Cooking: 35 minutes

Ingredients
1 cup oats
1 egg
1/2 teaspoon baking powder
1/2 teaspoon vanilla bean
1 tablespoon coconut palm sugar
1/2 cup coconut milk

Mix everything in a large bowl, pour into baking tray and bake for 35 minutes till brown @ 180 degrees C. Store in an airtight container in the fridge for 3 to 4 days.
