Stir Fried Garlic Eggplant & Courgette

I can’t even begin to explain how insanely yummy Grilled Eggplant & Courgette tossed in a sticky, salty, garlicy sauce is. It’s just SO GOOD. It’s the perfect Thursday quickie for a fridge clear out day where you roast a bunch of veggies and throw them together in 5 minutes with the sauce in a large work. Some steamed or egg fried rice on the side and you’re good for any meal.

Here’s what you’ll need

Serves: 2
Time: Prep 5 + grilling time | Cooking: 5 minutes

Ingredients
1 large eggplant, cubed and grilled
1 large courgette, cubed and grilled
1 teaspoon sesame oil
4 garlic cloves, chopped
2 1/2 tablespoon water
1 teaspoon dark mushroom soy
1 tablespoon light soy
1 tablespoon honey
1 teaspoon cornflour mixed with 1 tablespoon water (optional)
Chopped scallion to serve

Coat the eggplant and courgette with some olive oil, salt and bake for about 30 minutes till soft. In a large work, heat the sesame oil and add garlic. Sauté for 1 - 2 minutes till crispy and add remaining ingredients, stir till you get a sauce-like consistency. Stir and add grilled eggplant & courgette. Garnish with chopped scallion and enjoy.
