Ingredients
15 - 20 baby carrots, washed
1 tablespoon butter
1 teaspoon olive oil
1 tablespoon maple syrup
1 teaspoon balsamic vinegar
Burrata, chopped nuts to serve

Blanch baby carrots in salted water for 5 minutes, drain and set aside. Melt butter in a pan over a medium heat, add olive oil, carrots and sauté for 3 - 5 minutes till browned. Add maple syrup, balsamic vinegar and toss to coat. Serve with fresh burrata and chopped roasted nuts.
