Creamy Olive Oil & Basil Ice Cream

🍋 Trust me, homemade Basil & Lemon Olive Oil Gelato is easier to make at home than you'd think. This ice cream will have you dreaming of the Mediterranean beaches at first bite. It’s rich and creamy but zesty and fruity with the lemon and basil 💛. It isn’t overly sweet and you don’t need any fancy gadgets to make this. You need to pour, whisk and mix. Recipe below.

Here’s what you’ll need

Serves: 4 | Prep: 15 mins | Cooking: 30 minutes + refrigeration time

Ingredients

1/4 cup whole milk

1 vanilla pod

4 - 6 basil leaves

1 tablespoon lime zest

2 tablespoons olive oil

1 3/4 cups heavy cream

1 can sweetened condensed milk

Step one: Bring the milk to a low boil with the basil & lime zest, simmering for about 10 minutes then remove from heat. Strain and cool completely.

Step two:  At the same time, whip the heavy cream to stiff peaks.  Separately, combine condensed milk, vanilla bean and cooled milk mixture.  Slowly, add this and the olive oil to the whipped cream, folding gently till lump free - whisk a tiny bit at the end to make sure it’s completely mixed.

Step three: Pour into a freezer safe pan and freeze for several hours till ready to serve.
