Burrata, Pickled Cucumbers & Pistachios

But seriously though, how dreamy is burrata?

Keep it simple with no cooking necessary and add some dill pickled cucumbers, a drizzle of cold pressed avocado oil & chopped pistachios. So so divine on it's own, topped on toast, or with some grilled protein for a quick weeknight meal.

You can pickle your own cucumbers with some vinegar, honey, mustard seeds and dill in batches or buy some! I always have a bottle in the fridge and add them to anything creamy.
