Ingredients
1 tablespoon cold pressed avocado oil
1 leek, sliced
1 teaspoon garlic, minced
1 handful kale
1 small cauliflower
1 small broccoli floret
3 - 4 cups chicken stock
1/4 cup coconut milk
1/2 to 3/4 teaspoon salt
In a pan, heat the avocado oil on a medium heat and add leek and garlic. Sauté for 2 minutes and add remaining ingredients (except salt). Cover and simmer for 10 minutes. Blitz till smooth in a food processor / hand blender and adjust seasoning. If you like a thicker consistency, start with 3 cups or stock or add more for a lighter soup and add salt. Top with pumpkin, flax seeds and a dollop of coconut milk! Enjoy!
