1 tablespoon olive oil
1 garlic clove, smashed
1 large zucchini, spiralized
2 eggs
Truffle oil, mixed seeds, olive oil, salt & black pepper to serve
Heat olive oil in a large skillet and add garlic cloves. Sauté for a minute, add the zucchini noodles, salt & black pepper and cook for another minute. Form a nest like shape with the zucchini with a shallow hole in the middle - you’ll be able to make about 2. Crack egg in the middle of both and cover for about 5 minutes whilst eggs cook to your liking. Drizzle with truffle, mixed seeds, olive oil, freshly ground black pepper & salt before serving.ey’re creamy, nutty and crunchy - they’re just perfect.
