Zucchini Egg Nests with Truffle and Olive oil
One pan veggie goodness Zucchini Egg Nests with Truffle are simply divine. 10 minutes from start to finish, they’re perfect for breakfast, brunch or lunch. Ingredients
1 tablespoon olive oil
1 garlic clove, smashed
1 large zucchini, spiralized
2 eggs
Truffle oil, mixed seeds, olive oil, salt & black pepper to serve
Heat olive oil in a large skillet and add garlic cloves. Sauté for a minute, add the zucchini noodles, salt & black pepper and cook for another minute. Form a nest like shape with the zucchini with a shallow hole in the middle - you’ll be able to make about 2. Crack egg in the middle of both and cover for about 5 minutes whilst eggs cook to your liking. Drizzle with truffle, mixed seeds, olive oil, freshly ground black pepper & salt before serving.ey’re creamy, nutty and crunchy - they’re just perfect.
