Creamy Pumpkin & Star Anise Coconut Soup

If you’re craving something sweet, crowd our those processed sugar cravings and give yourself a dose of nature’s sweetness 🧡. Perfect when you've got all of 15 minutes to spend in the kitchen with minimum ingredients but need something super satisfying.

I've thrown in some sweet potato and carrot too so you get plenty of Vitamin A, C & K and an antioxidant boost. Great for meal prep, make yourself a batch and heat when you need for a quick meal or with some grilled fish or chicken through the week.

Here’s what you need:
2 cups pumpkin, chopped into cubes
1 large sweet potato, chopped into cubes
1 large carrot, chopped
1 tablespoon coconut oil
1 teaspoon ginger
1 cup chicken / veggie stock for a vegan option
200ml coconut milk
2 star anise
Salt to taste
Fresh red chilli to serve (optional)

In a medium pan, melt the coconut oil over a high heat. Add ginger & sauté for 1 - 2 minutes. Add pumpkin, sweet potato, carrot and continue to sauté for 3 - 5 minutes until the veggies turn a little golden. Add coconut milk, stock, star anise and bring to a boil. Simmer for 12 - 15 minutes until veggies have cooked and adjust salt to taste. Remove star anise and blend till smooth, add more stock for a lighter consistency. Serve with red chilli and a dollop of coconut milk. Enjoy!
