Dark Chocolate and Honeycomb Banana Bread

A one bowl, no fuss & mess refined sugar free Banana bread to make with all this bananas that get overripe just suddenly.

With crunchy honeycomb this rich, soft banana bread has gooey pockets of melted dark chocolate all over and cocoa powder to make it double chocolatey.  Perfect for breakfast, lunch or as a teatime snack.  I didn’t add any nuts so it works so well in the lunchbox with the kiddos with the no nut policy in schools however if you’re not going to make it for that, add pecans, they taste glorious with banana.

Here’s what you’ll need

Serves: 4- 6

Time: Prep 5 mins | Cooking 45 minutes

Ingredients

2 very ripe bananas, mashed + 1 for the top (split lengthways)

1 1/2 cups all purpose flour

2 eggs

1/2 cup greek yogurt

1/3 cup coconut oil

1/3 cup maple syrup

2 tablespoons cocoa powder

2 tablespoons dark chocolate chips

1 teaspoon baking soda

1/2 teaspoon cinnamon

Pinch of salt

Handful honeycomb

Step One: Preheat oven to 180 degrees Celsius.  In a large bowl, mix the bananas and wet ingredients.  Add dry ingredients and fold to mix.

Step Two:  Brush a loaf pan with som coconut oil and pour batter in.  Top with sliced banana and bake for 45 - 50 minutes or until cooked.  Allow to cool, slide and enjoy!
