Ingredients
Salad
1 packet Halloumi
1 red bell pepper, diced
1 cup cherry tomatoes, halved
1 cucumber, sliced then quartered
1 shallot
1/2 cup black olives, pitted and sliced
1/2 cup feta, cubed
1 tablespoon sesame seeds, roasted
2 cups raw pasta of choice
Handful mixed chopped herbs
Torn pita (optional)
Dressing
1 tablespoon good quality olive oil
1 tablespoon honey
1 tablespoon lemon juice
1 tablespoon tahini
Step One: Boil the pasta, drain and allow to cool. While pasta is cooking, slice halloumi and sear till brown on both sides. Cut into squares.
Step Two: Combine all the salad ingredients and add pasta and mix well.
Step Three: Mix all the ingredients for the dressing. Toss into salad, top with halloumi and serve.
