My Happy Baked Harvest Bowl

This harvest bowl just makes me happy.  It’s got such incredible colours and flavours, it’s one of my favourites.  If you like a sweeter salad, this one’s for you and with the dressing it’s just divine.  It’s got so many feel good ingredients, it’s guaranteed to fill you and your body up with plenty, plenty of happiness. This bowl is guaranteed to flood your system with antioxidants, vitamins, fibre, protein, healthy fats and minerals - it’s just the perfect complete plate! Leftovers keep so so well too!

Here’s what you’ll need

Serves: 2 - 4 | Prep: 10 mins | Cooking: 30 minutes

Ingredients

Salad

4 large handfuls kale

2 sweet potatoes, baked in maple and olive oil, cubed

4 beetroots, baked in maple and olive oil, cubed

1 cup pomegranate arils

1 cup roasted walnuts

1/4 cup raisins

Handful Wensleydale cheese, crumbled

Dressing

2 tablespoons avocado oil

2 tablespoons nutritional yeast

1 tablespoon coconut aminos

2 tablespoons kewpie sesame dressing

Step One: To plate, layer the kale first and then potatoes and beetroots.  Sprinkle the arils, walnuts and raisins and cheese over.  Dress and serve.
