Pink Superberry & Superseed Breakfast Parfait

A delicious and beautiful breakfast that you can put together in all of 5 minutes. Nutrient rich with a dose of omega 3s, healthy fat from the coconut & plant protein from the seeds.

You’ve also got your superfood goodness from the mulberries & goji seeds. The cocoa nibs add an antioxidant & feel good boost to this body, soul & mood lovin’ breakfast or snack that can be #plantbased #vegan #dairyfree and #glutenfree! Here’s what you’ll need

Time: 5 Minutes + overnight | Makes: 6

Parfait
1 tablespoons hemp seeds
2 tablespoons chia seeds
1 cup milk of your choice (plant based or regular)
1 teaspoon beetroot powder / 1 - 2 large cubes of fresh beetroot
2 - 4 tablespoons Greek yogurt / coconut yogurt
1/2 teaspoon maple syrup / coconut palm sugar / honey

Topping
Handful strawberries, dried mulberries & goji berries
1 teaspoon cocoa nibs

1. Combine all ingredients for the parfait in a container and refrigerate for up to an hour or overnight. If using fresh beetroot, remove before serving.
2. To serve, layer in a jam jar / glass or bowl starting with some berries, followed by yogurt, followed by some of the seed parfait and repeat till the top. Top with berries, cocoa nibs and enjoy! Refrigerate the seed parfait for up to 3 days, just put together when you’re ready to eat!
