Red Pepper & Carrot Soup with Kaffir Lime & Galangal for some quick delicious meal prep.

This has to be one of the best soups I've ever made! It’s got incredible ingredients for your body to support and encourage cellular growth with beta-carotene, anti inflammatory ginger and turmeric and in just 15 minutes you’ll literally transport yourself onto a sunny Thai beach. Enjoy

Here’s what you’ll need:

Time: Prep 5 minutes | Cook 10 minutes
Ingredients
2 tablespoons coconut oil
1/2 teaspoon ginger / galangal minced
2 carrots, chopped
1 large pepper, cubed
1/4 teaspoon turmeric
1 1/2 cups hot beef stock / or veg stock
1/4 cup coconut cream
2 Kaffir lime leaves
1/2 teaspoon pink salt

1. Melt coconut oil in a large stock pot and add all ingredients. Bring to a boil and simmer for about 8-10 minutes (till the carrots have cooked). Remove lime leaves and blend till smooth. Serve with coconut cream and some crunchy seeds.
