Ingredients
2 cups chopped broccoli
1/4 cup fresh basil
1 tablespoon olive oil
1 teaspoon garlic
1 cup coconut milk
1/2 cup beef stock (or any that you like)
1/2 teaspoon salt
To Serve
Coconut cream
Stilton
Freshly ground salt & black pepper
Fresh basil
1. Heat a medium stock pot and heat the olive oil. Add garlic and stir till fragrant. Add broccoli and sauté for 5 minutes. Add milk, stock and bring to a boil. Reduce heat and simmer for 5 minutes until cooked.
2. Add basil, puree soup to desired consistency, I like mine a bit chunky but if you’d prefer smooth, pass through a strainer.
3. Serve with a swirl of coconut cream and olive oil, stilton and some freshly ground black pepper, salt pepper & basil.
