Roasted Creamy Tomato Soup with Saffron

An insanely deliciously creamy warm and cozy soup made with oven roasted tomatoes, smoky onion soup sweet paprika and saffron. Up your tomato soup decadence in minutes with the saffron, trust me - it’s a game changer. Apart from the roasting time, it’s pretty much a 5 minute soup so have the tomatoes roasting when you’re doing something else.

Here’s what you’ll need

Serves: 2- 4

Ingredients
2 - 3 tomatoes, quartered
1 cup baby tomatoes
1 large bulb garlic
1 tablespoon olive oil
1/2 cup coconut milk / regular milk
1 cup chicken / veg stock
Large pinch saffron
1/4 teaspoon sweet paprika
Salt & black pepper to taste
Balsamic glaze & sweet paprika to drizzle

1. Drizzle tomatoes with olive oil, salt, black pepper and roast for about 30 - 40 minutes at 180 degrees Celsius. Place all ingredients with the roasted tomatoes in a pan and bring to a boil. Blend till smooth.
2. Drizzle with balsamic glaze and serve with warm buttered crusty bread.
