Ingredients
1 teaspoon butter
1 tablespoon extra virgin olive oil
1 teaspoon garlic, chopped
1 leek, sliced
250g button mushrooms, sliced and completely dry
1/2 cup parmesan grated
1/2 teaspoon salt
5 - 6 dried porcini mushrooms, soaked in 1/4 cup water, sliced finely
1 teaspoon olive oil
To serve
Pasta of choice
Freshly ground black pepper and salt

1. Melt butter and olive oil over a medium heat and add garlic and leek. Sauté for 2 minutes till soft and add button mushrooms and cook over a high heat for 6 minutes. Add parmesan, salt and reserved porcini water and bring to a boil for about 2 minutes. Blitz to desired consistency and add cream if you’d like.
2. Heat olive oil in a pan, add porcini mushrooms for 1 minute - they’ll crisp up really nicely. Add to sauce
3. To serve, pour sauce over desired pasta and finish with parmesan, freshly ground black pepper & salt.
