Crispy Louisiana Air Frier Chicken

This gluten free Crispy Louisiana Air Frier Chicken is so so good.

Skip the hot oil fuss, prep, marinate the chicken in advance & throw into the air frier. Make some hot sauce, slice some cucumbers & mix with Greek yogurt for a side while the chicken is cooks and you're done! Couldn’t be easier for a mid week meal for anyone and everyone in the fam.

I love LOVE my air frier for many a reason. Firstly, the mess factor - gone are the days of oil splattering all over everywhere. Don’t you literally feel like an oily tornados gone through your counters, floors, utensils ugh everything is an icky mess. So with an air frier, NONE of this happens. Secondly you literally just need a tiny bit of oil - I love that. Time & efficiency guaranteed - It’s quick, worry free cooking - you can use the air frier for lots of different types of recipes. Set the timer, turn up the temp, once it’s done, it goes off by itself. Happy days!

Red rice is also super rich in nutrients, fiber and antioxidants. It contains anthocyanin, a compound believed to help reduce inflammation which has multiple benefits such as improved blood sugar, cholesterol and metabolism. Red rice also contains manganese which also has similar benefits (so does the ginger and turmeric) so it’s a double whammy of positivity for your body, and mind.

Here’s what you’ll need

Time: Prep 20 minutes + Marination time | Servings: 4

Marinade
1/2 kg boneless chicken breast, cut into tenders
1 cup buttermilk
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon paprika
1/2 teaspoon crushed black pepper
1/2 teaspoon coconut palm sugar
1 tablespoon olive oil
2 tablespoons buffalo sauce

Rice flour with salt & black pepper to coat
Olive oil

To serve
1 cup Louisiana sauce
2 tablespoons butter
Cucumber Salad

Mix all the marinade ingredients and allow to marinate for 2 hours or overnight - allow chicken to come to room temperature before cooking. Turn up the temperature of your air frier to 200 degrees Celsius & let it heat up for a few minutes. Brush the tray with olive oil. Dredge the chicken into the rice flour and place into the air frier tray. Cook for 7 - 9 minutes. Brush top side with olive oil and flip over. Brush the second side with olive oil and cook for a further 7 - 9 minutes. Before serving, heat Louisiana sauce and butter together. Toss chicken in sauce (hot sauce on the side if it's also for the the kids) and serve with cucumber salad.

Cucumber Salad
6 small cucumbers, sliced finely
Handful fresh dill, chopped
1/2 cup greek yogurt
1 teaspoon mustard
1/2 teaspoon coconut palm sugar
Salt to taste

Mix all the ingredients together and refrigerate.
