Crunchy Plant Goodness Rainbow & Almond Salad

This Coleslawish Crunchy Plant Goodness Rainbow & Almond Salad is crunchy, salty, nutty and so refreshing with plenty of hydrating veggies included to flood your body with plenty of water and goodness. Takes 10 minutes to prepare and it’s so great for a healthy dose of veggies and nut goodness. It’s dairy free, refined sugar free and still tastes so good.

All the veggies are so hydrating for your body which helps with headaches, tiredness and improved sleep. Purple cabbage is also a fibre powerhouse and keeps everything in your gut moving well so if you’re experiencing digestion issues - purple cabbage is perfect for this. It’s also great for immunity and packed with antioxidants to protect your cells from oxidative stress and radical damage so it keeps cell regeneration going.

Here’s what you’ll need:

Ingredients
2 cups red cabbage, shredded
2 carrots grated
1 handful chopped sugar snap peas, finely chopped
1 handful chopped sugar snow peas, finely chopped
1 handful scallion, sliced
1/4 cup almonds, roasted and chopped

Dressing
1/4 cup almond butter
1 tablespoon tahini
3 tablespoons coconut aminos
1 tablespoon sesame oil
1 tablespoon coconut palm sugar
1 tablespoon lime juice
1/4 cup toasted sesame seeds
1 tablespoon sriracha (optional)

Mix all the veggies together and add the dressing. Mix and refrigerate for up to 5 days.
