Golden Cauliflower & Coconut Soup

This quick Golden Cauliflower & Coconut Soup is so simple but so so wholesome, perfect for lunch or light dinner. And it’s super creamy - you won’t believe there’s no dairy in it and the turmeric adds a delicious earthy, sweet flavour that’s incredible with the coconut.

Oh and curcumin, which is the active ingredient in turmeric has been shown to reduce oxidative stress and inflammation. It can also help with anxiety and depression by stimulating the release of your happy hormones into your body - just what you need to stay calm & grounded. It’s a really quick recipe too - you can roast or boil the cauliflower and keep it in the fridge & throw it together in 10 minutes when you’ve got the time so it’s such a low comforting meal that’s actually amazing.

Here’s how you make it:

Time: 10 minutes | Serves 2 - 4

Ingredients
1 tablespoon ghee
1/2 teaspoon garlic
1/2 teaspoon turmeric
1 bay leaf
3 cups cauliflower roasted / boiled
1/3 cup coconut cream
2 cups chicken stock
Salt & black pepper to taste
Micro greens to garnish

Heat the ghee on medium in a large pot, add the garlic, turmeric, bay leaf & sauté for 2 - 3 minutes. Add the cauliflower and brown for a couple of minutes before adding in the coconut cream and stock.

Bring to a boil and simmer for 5 minutes before blending and adjusting salt & black pepper to how you like it - it also depends on the saltiness of your stock so definitely add the salt last! Add some micro greens, a little more black pepper and have on its own or with some buttered toast.
