Mixed Microgreens with Miso, Yuzu & Crispy Shallots

This simple Microgreen salad is so fresh, so vibrant, so super crunchy with a tangy mellow Miso & Yuzu dressing works so well together.  Crispy onions topped at the end taste so good as well, you’ll love it.

And the and you won’t believe how much goodness these little babies have.  Microgreens have 10x the amount of nutrients than their big bros and they taste delicious - adding a different texture and flavour to your regular salad.  They’re rich in vitamins C, E & K which are great for an immunity boost and antioxidants to help keep your system running at its peak.

It’s great to keep mixing it up with different varieties so your body gets a full spectrum of nutrients on a daily basis and so does your palate.  Keep switching it out and you’ll definitely NOT get bored of eating the same salad everyday.

Here’s what you’ll need

Serves: 2

Time: Prep 10 minutes

Ingredients

4 tablespoons sesame oil

1/4 cup white miso

1 tablespoon japenese rice vinegar

2 tablespoons yuzu / lime juice

6 tablespoons coconut aminos

Mixed regular and micro greens

Sliced avocado

Handful crispy onions

Step one:  Combine the sesame oil, white miso, rice vinegar, yuzu and coconut aminos together.  Plate the greens with the sliced avocado and top with crispy onions.  Drizzle dressing over and enjoy!
