Puy Lentil & Grape Salad with Hazelnuts & Pomegranate Molasses & Rocket

Monday meals kept simple with this divine tummy in my tummy Puy Lentil Salad with sweet juicy grapes, crunchy earthly hazelnuts and parsley in a simple quick dressing with omega 3 boosting heart loving high quality olive oil and a balsamic glaze. That’s it. It’s so delicious and perfect as a side. Grape and Puy lentils are a great way to get your polyphenol fix to help your body boost its defence system and keep it in check - the benefits are endless.

Lentils are also a great source of fibre, protein and carb so you’re looking at a complete, incredible salad for a side to some grilled meat for dinner or on it’s own with a warm soup for a cozy lunch.

For some sweetness, I added blackstrap molasses which are a great substitute for sugar. It's naturally rich in antioxidants, iron, calcium, magnesium, potassium, phosphorus, and vitamin B6 and you’ll get plenty more from the hazelnuts and lentils.

Here’s what you’ll need:

Serves: 2
Time: Prep 5 minutes

Ingredients
1 cup puy lentils, cooked
1 cup red grapes, quartered
1/4 cup roasted hazelnuts, sliced / chopped roughly
2 tablespoons good quality olive oil
1 tablespoon fig balsamic / regular
1 - 2 teaspoons blackstrap molasses
Salt to taste
Large handful chopped parsley

Combine the olive oil, balsamic, blackstrap molasses and salt together. Mix lentils, grapes, hazelnuts and parsley together. Pour in the dressing and refrigerate for an hour to two to allow the dressing to get into the rest of the ingredients.
