Superfood Dark Chocolate & Coconut Butter Bombs

In the mood to make a bite sized candy bar - here come these Dark Chocolate & Coconut Bombs.

These buttery coconut filled dates dipped in dark chocolate with crunchy dried goji and mulberries are the yummiest little treat and are so quick to make. You need 10 minutes of prep time - eat them right away or put into the fridge till crunchy and enjoy on demand!

Using good quality dark chocolate is super essential - a lot of the ones you see in the stores are still loaded with other ingredients so make sure you’re buying quality dark chocolate with a high cocoa content. Making sure you’re buying the right type also adds plenty of other benefits too. Cocoa contains polyphenols, a compound that can enhance feelings of calmness whilst dark chocolate contains tryptophan, a amino acid used to release your feel good serotonin chemical into your bloodstream! All the more reason to make these bad boys for a sweet fix. Hope you love them as much as I do!

Here’s what you’ll need

Time: Prep 10 minutes | Makes: 12

Ingredients
12 dates
6 pieces of raw dark chocolate
1 teaspoon coconut oil
1/4 teaspoon vanilla pod
Pinch of cinnamon
A tablespoon of mixed seeds, cocoa nibs, dried mulberries & goji berries (pick and choose whatever you like)
A couple tablespoons of coconut manna
Sea salt

Split dates with a knife and remove pit. Using a teaspoon, spoon a little coconut manna into each date, stuffing the centre and gently push back together. Melt dark chocolate and oil together in the microwave for about 1 - 2 minutes in 20 second intervals until glossy. Add vanilla, cinnamon and mixed seeds, cocoa nibs, dried mulberries and goji berries) and stir. Line a tray with baking paper, dip dates into chocolate and place on tray. Sprinkle with sea salt and some more finely chopped berries if you like. Refrigerate for 30 minutes or so until set and store in the fridge. Enjoy!
