Heartbeet Dressing

This Heartbeet Dressing with beets, tahini and pomegranate is the perfect autumn dressing to meal prep in 5 and keep in your fridge. You can have it with a salad, top on roasted vegetables or eat with raw cut veggies.

There’s so many reasons you need to include beetroot in your life. Firstly, they’re rich in fibre to keep your gut healthy and happy which keeps your immune system in check and it’s a great source of Vitamin C - giving your body that added vitality boost. It’s packed with #antioxidants and #nutrients that may reduce inflammation in the body, lower your blood pressure and keep that heart of yours strong. If you love working out and want to up your stamina, beetroots are rich in dietary nitrates that your body converts into nitric oxide that can also help increase stamina and athletic performance. And they taste delicious juiced, roasted, sautéed and raw - plenty of reasons to have them!

Here’s what you’ll need

Time: Prep 5 minutes

Ingredients
1 small beetroot
2 tablespoons olive oil
1 tablespoon lemon juice
1 tablespoon tahini
1 tablespoon pomegranate molasses
4 tablespoons coconut / oat / almond milk

Mix all ingredients in a blender and blitz till smooth. Refrigerate for up to 4 days in an airtight container.
