20 minute Creamy Coconut Chicken Krapow

Guys! Honestly I started this recipe and didn’t even realize how INSANELY delicious it was going to be. This quick 20 minute Creamy Coconut Chicken Krapow is heavenly.

I was in one of my moods. I wanted to make something quick but needed it to be Thai, I was craving Krapow BUT I also wanted a curry so I just kind of went with it aaaand… I ended up with a creamy version of it. I’m not lying - I made enough for leftovers and the next day there was none left - Kass confessed he’d over eaten because it was that good and Keanu munched right through it too.

I love adding lots of veggies to my curries - the more colourful the better so you get your daily dose of #fiber#antioxidants & plenty of goodness. For this one I used mixed red & orange peppers with mushrooms. I just check what needs to be used up when I’m making a curry to #reducekitchenwaste. Here’s what you’ll need


Time: Prep 5 minutes | Cook 20 minutes | Serves: 4

Ingredients

Veggies
1 tablespoon coconut oil
1 shallot, sliced
2 - 3 cups mixed vegetables, roughly chopped / sliced
1/2 tablespoon dark mushroom soy sauce / regular dark

1 tablespoon coconut oil
3/4 tablespoon garlic, minced
1/2 tablespoon galangal /or ginger, minced
1 tablespoon lemongrass, minced
1 tablespoon red bullet chilli, minced (optional)
500g minced chicken
1/2 tablespoon dark mushroom soy / regular dark
1 tablespoon light soy
1 tablespoon fish sauce
1/2 tablespoon rice vinegar
1/2 tablespoon coconut palm sugar
1/2 cup chicken stock
200 ml coconut milk
100ml coconut cream
A few kaffir lime leaves

Fresh Thai basil to serve

1. Melt the oil over a medium high heat, add shallots & vegetables. Sauté for 3 - 5 minutes until soft, add soy. Set aside.
2. In the same wok, add oil, garlic, galangal, lemongrass & sauté for 2 minutes. Increase heat to high, add chicken, breaking it up with the wooden spoon into bits until chicken starts to brown and is minced nicely - this should take 5 - 7 minutes. Add remaining ingredients including vegetables & bring to a boil. Reduce to a medium heat & simmer for 5 minutes. Throw over some fresh basil & enjoy!
